It’s officially feeling like fall — the air is crisper, the breeze has arrived, and the leaves have started to descend from the trees they once clung to. With October just a week away we’ve been craving some serious pumpkin over here. We’ve stocked our pantry with all the necessities to whip up the deliciousness of fall baked goods and my baking brain is powered up for some creating of my own. Today I whipped up some pumpkin spice chocolate chip cookies to take to our dear friends who invited us over for dinner. The result was a deliciously moist fall nibble. This is an autumn delight you’ve got to try for yourself!

ingredients::
1 cup whole wheat flour
1 cup all purpose flour
1/2 tsp baking soda
4 tsp pumpkin pie spice
1/4 tsp salt
1 cup sugar
1 cup brown sugar
4 tbsp butter, melted
2 egg whites
4 tbsp canned pumpkin
2 tsp pure vanilla bean paste
1 cup chocolate chips
to bake:
Preheat oven to 350 degrees. Grease cookie sheets.
Mix the flours, baking soda, salt, and pumpkin spice: stir quickly with a whisk. In a second bowl, whisk the sugars, butter, egg whites, pumpkin and vanilla until fluffy. In two batches, add the dry ingredients into the wet ingredients. Spoon onto baking sheets & bake for 8-10 minutes. Cool for 5 minutes before removing from pan. Enjoy!
